2 tbsp dried oregano

Prime Rib Rub Seasoning

Prime Rib Rub takes 5 minutes to make and will be a staple in your spice cabinet! It is so fresh and flavorful you won't want your prime rib any other way.

Ingredients

3 tablespoons Kosher salt
2 tablespoons coarse ground pepper
1 tablespoon dried Italian seasoning herbs
1 tablespoons garlic powder
2 teaspoons onion powder
2 teaspoons smoked paprika or regular paprika

  1. Place all of the ingredients into a bowl and whisk to combine.

Notes

  • Rub the seasoning all over the prime rib, making sure to get the top and bottom. You can also use this seasoning on other beef, such as oven-roasted beef or hamburgers.
  • If you aren't using it right away, store it in a sealed container for up to 2 months. I use Mason jars with plastic lids. They store and stack well in my pantry.

Pumpkin Pie Truffles

INGREDIENTS

  • 20 graham crackers or 300g vanilla wafers
  • 2 1/2 ounces cream cheese
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 2 cups white chocolate or white chocolate almond bark

INSTRUCTIONS

  1. In a food processor, pulse graham crackers until fine. Place in a bowl and set aside.
  2. Into the same food processor, add your cream cheese, pumpkin puree, pumpkin pie spice, and vanilla, and mix until smooth. Add the graham cracker crumbs back in and continue mixing until incorporated. Scrape down the sides as needed. Place mixture into a bowl and refrigerate for 30 minutes.
  3. While the mixture is cold, roll it into 1-inch balls and place them on wax paper. Freeze the truffles for at least two hours or up to overnight.
  4. Melt your white chocolate and then dip truffles one at a time to evenly coat each one. Set on wax paper to harden. Dip the truffles a second time. While the truffles are still wet, sprinkle the top with a dusting of pumpkin pie spice and let the truffles harden completely.

Note, you do not need a food processor. If you don't have a food processor, add graham crackers or vanilla crackers to a bowl or zip-top bag and smash until the crackers resemble granulated sugar.

INGREDIENTS

1 cup creamy no stir peanut butter
3 tablespoons salted butter, melted
1 cup powdered sugar
2 ½ cups rice krispies cereal
12 oz Semi sweet chocolate chips or chocolate melting wafers

INSTRUCTIONS

  1. Use a KitchenAid or hand mixer to combine the peanut butter and melted butter.
  2. Add the rice krispies until combined.
  3. Add the powdered sugar and mix to combine.
  4. Once it becomes too hard to mix, finish mixing it together with a rubber spatula.
  5. Line a baking sheet with parchment paper.
  6. Use a cookie scoop to drop peanut butter balls onto the baking sheet.
  7. Roll the batter into balls with your hands and place in the fridge for at least 30 minutes to chill and firm up.
  8. Melt the chocolate in the microwave until smooth.
  9. Dip the rice krispies peanut butter balls into the chocolate then place back onto the baking sheet.
  10. Chill until firm.
Store leftover peanut butter balls in an airtight container for several days, or in the freezer for several weeks.

Note, you do not need a mixer. It does make it easier.

Chocolate chips make this recipe easy and you can probably make them right now. These ingredients are most likely in your pantry. Chocolate almond bark typically gets more compliments.
